Mary Berry's Ciabatta with Mushroom Omelette

Just cos it doesn't look good, doesn't mean it's not tasty...
Tonight's recipe is really simple due to time constraints and a lack of interest in food once again.  It didn't feel like it should really be part of the challenge as it's 'just a mushroom omelette shoved in a ciabatta' but it's actually a nice idea.  I'm not sure I'd've ever thought of it.

There were no real revelations in the actual making of said omelette and she does nothing funky with the seasoning.  But then this is Mary Berry we're talking about.  I'd expect nothing more.  Especially as this book is nearly twenty years old.  It's just good, honest food; really quick to make and very filling.  I think I'd add cheese next time, but that's just because I'm greedy.

Recipe - serves 2
  • 1 ciabatta, warmed and split horizontally
  • 4 eggs
  • 250g mushrooms, thickly sliced
  • 25g butter
  • fresh thyme
  • salt and pepper to season
  1. Place half the butter in a frying pan and heat until foaming.  Fry the mushrooms for 3-4 minutes.  Remove to a plate and clean the pan.
  2. Heat the rest of the butter in the frying pan.  Whisk the eggs together with 2 tbsp water, the thyme, salt and pepper.  Cook over a medium heat until set.
  3. Add the mushrooms to the omelette, roll and place in the ciabatta.  
  4. Cut into two and serve with a side salad.
